David Dodson, a CIA-trained chef, bought the Vallejo, California, bakery in 2008. His culinary talent and dedication to using only authentic, clean-label ingredients helped him create the world’s most wonderful cookie recipes. That was the impetus for the beginnings of The Graceful COOKIE company!

David’s cookie recipes are extraordinary. He uses the simplest ingredients and culinary techniques to create rich, complex flavors. As a chef well versed in “how to scale up” recipes, he redefined his authentic processes into a batch baking method. It’s labor-intensive, but this is what makes our cookies heavenly!
